Whole oat groats steamed and pressed flat. The processing is physical only, so the bran and germ stay attached — which is what keeps the beta-glucan fibre intact compared with more heavily processed instant oat flours.

Rolled oats sit between steel-cut oats (chopped, not flattened) and instant oats (rolled thinner and pre-cooked further). All three are whole grain; the difference is surface area, which affects how quickly they digest.

On a bar or cereal label, "rolled oats" is a whole-grain ingredient. "Oat flour" and "oat fibre" are not the same thing and belong in different rows of this directory.
